Cooking Recipes

·Apple Croquette

Ingredients for 4 people

  • An Apple
  • Pumpkin···400g
  • Onion···1/2
  • Parsley
  • Butter···24g
  • Salt and Pepper
  • Nutmeg
  • Seaweed
  • Flour
  • An egg
  • Bread crumb
  • Deep fried oil

How to cook

  1. Peel and remove the seed from pumpkin. Cut it into bite-size and boil it. If the pumpkin becomes soft, throw water away. Puree the pumpkin while it is hot.
  2. Chop onion and peel an apple. Take out the core of apple and cut it into 7mm cube.
  3. Melt the butter in a pan and cook onion until wilted. Add cubic apples and cook it again.
  4. Add onion, apple, salt and pepper, nutmeg with the pumpkin and make small balls in 3 cm in diameter. Cover with flour, beaten egg and bread crumb in order. Deep fry to make balls brown in 180℃.
  5. Put thin seaweed on the top of croquette and make croquette like an apple shaped. Put fried parsley beside croquette.
·Cream Gratin with Apple and Sweet Potato

Ingredients for 4 people

  • 2 Apples
  • 1 big Sweet Potato
  • Milk···1/2 Cup
  • Sugar···45g
  • Rum
  • Raisin···20g
  • Fresh Cream···3/4 Cup
  • Butter
  • Melting Cheese···120g

How to cook

  1. Peel apples and cut those into 1cm thick small pieces. Add 27g of sugar and pour in just enough water to cover apples and simmer.
  2. Peel sweet potato, cut it as the same size as apples and add milk 1/2 cup, 18g of sugar and enough water to cover. Simmer it.
  3. Put a little bit rum to raisins and make those soft.
  4. Whip fresh cream lightly.
  5. Drain off the water from apples and sweet potato. Add those and raisins in fresh cream and mix those lightly.
  6. Coat the inside of the heat-resistant container with butter. Put ⑤and add melting cheese on the top. Put it into the oven and grill.
·A hamburger patty with apples

Ingredients for 4 people

  • 2 Apples
  • Ground Pork···300g
  • Small Onion···1/2
  • 2 Dried Mushrooms (Shiitake)
  • A sliced Bread
  • Milk
  • An Egg
  • Salt ···5g
  • Pepper
  • Nutmeg
  • Broccoli···150g
  • 2 Potatoes
  • Tomato Ketchup···72g
  • Worcestershire sauce···72g

How to cook

  1. Chop onion and shiitake which is put back into water.
  2. Sop sliced bread to milk. Squeeze bread tightly and break it into small pieces.
  3. Take out the core of apple. Cut an apple into 4 rings (7mm thick) and sauté those. Cut the rest of apple into 1cm cube.
  4. Put butter in a pan and sauté onion and 150g of ground pork. Add cubic apples and sauté. If it is done, make those cool.
  5. Mix 150g of ground pork, onion, shiitake, egg, bread, salt and pepper, nutmeg with ④. Divide the patty into 4 pieces and spread the flour on patty and make the dent at the center of patty.
  6. Melt the butter on a pan and cook the patty on low heat. Shake a pan sometimes. If you could see meat juice on the surface of patty, flip it.
  7. Mix tomato ketchup and Worcestershire sauce and boil those. Put the sauce on the plate and put hamburger patty on it. Put sautéed apples on top.
  8. Add boiled broccoli and potatoes to the hamburger patty.
·Steamed dumplings with apples

Ingredients for 4 people

Dough of dumpling

  • Hard Flour···2 Cup
  • Boiled water···2/3 Cup

Filling

  • Ground Pork···150g
  • An Apple
  • Japanese Leek···5cm
  • Salt···7.5g
  • Ginger Juice
  • Soy Sause···34g
  • Japanese Sake···15g
  • Lard···14g
  • Sesame Oil···14g

Seasonings for Adjusting

  • Vinegar···60g
  • Soy Sauce···68g
  • Chili Oil
  • Mustard

How to cook

  1. Put the sifted flour in to the bowl and mix with hot water to make soft dough. Cover with wet towel on the bowl and let the dough stands for 20 minutes.
    After that, divide the dough into 30 pieces and roll out dough into thin round.
  2. Peel an apple, remove the core and cut an apple into 5mm cube. Put oil in a pan and cook lightly. Make cubic apples cool.
  3. Make fitting with ground pork, apple and seasonings.
  4. Wrap ③ with dough of dumpling and put oil in the steamer. Make a space between the dumplings and put those into the steamer. Steam those for 15 minutes.
  5. Put vinegar, soy sauce, mustard and chill oil on the table. Use seasonings you like.
·Pickles of Chinese Cabbage and Apples

Ingredients for 4 people

  • Chinese Cabbage···1/2
  • 2 Apples
  • Malted Rice···45g
  • Salt···32g
  • 2 Red Peppers

How to cook

  1. Rinse Chinese cabbage and shave it.
  2. Cut apples lengthwise in 4 pieces with peel and cut into 3mm small pieces.
  3. Soak malted rice into lukewarm water to reconstitute.
  4. Remove the seed of red peppers and slice in round.
  5. Put Chinese cabbage, apples, malted rice, red peppers and add salt in a tub. Mix those to combine evenly and put a stone as a weight on. You may eat pickles 1 or 2 days later.
·Croquette using Chinese yam and Apples

Ingredients for 2 people

[Filling]
  • Ground meat (beef and pork)・・・100g

How to cook

  1. Cut apple into 7mm cube. Grate Chinese yam.
  2. Mince onion, carrot and green pepper.
  3. Season ground meat with salt, pepper, soy sauce, sugar, sake and chemical seasoning.
  4. Fry 2 and add ground meat and cook again. Ground meat is cooked well, turn off the heat.
  5. Add cubic apple to 4 and add 1//2 of egg and bread crumb and mix well.
  6. Make balls with 5 and put flour, beaten egg and bread crumbs in order and deep fry those.
  7. Put apples for sauce and simmer with wine. Add ketchup and semi-thick sauce and simmer again.
  8. Add mayonnaise to sauce. And it is all done.

Ingredients for 4 people

  • Almonds・・・10g
  • Walnuts・・・10g
  • Potato・・・50g
  • 12 Dumpling wrappers
  • Sugar・・・30g
  • Water・・・50cc
  • Soft flour・・・30g
  • Butter・・・30g
  • Milk・・・250cc
  • Cinnamon

How to cook

  1. Cut an apple into cube and mince almonds and walnuts. Steam potatoes and strain it.
  2. Put sugar and water in a pod and cook apples, almonds and walnuts. When the liquid is gone, turn off the heat.
  3. Put butter in a pan and add soft flour. Add milk and make a white sauce.
  4. Put apples, almonds, walnuts, potatoes, cinnamon in a white sauce and stir up and knead with heat.
  5. Wrap kneaded white sauce with dumpling wrapper and deep-fry. Arrange the dumplings on the dish.
·Cold Cream Soup using Aomori Fuji Apples

Ingredients for 10 people

[Soup]
  • 3 Apples
  • Salt
  • Lemon juice
  • Water
  • Butter・・・30g
  • White wine・・・40cc
  • Sugar・・・3/4 Cup
  • Water
  • Cinnamon Stick・・・half
  • Starch・・・8g
[Extra Seasoning]
  • Apple Juice
  • Fresh Cream
  • Milk

How to cook

  1. Peel an apple and cut it into 8 pieces. Soak 8 pieces of apple into water with lemon juice and salt.→cut Apples into smaller pieces.
  2. Put butter in a pod and sauté 8 pieces of apple and cinnamon stick.
  3. Add white wine, sugar and water in a pod. Covers with aluminum foil on a pod and stew it on law heat. If pieces of apple become soft, remove the aluminum foil and turn off the heat.
  4. Remove the cinnamon stick and put the rest in the blender. Filter blended apple and put it on the heat.
  5. Mix starch with wine or water and add into a pod with apple paste. Put apple paste in a bowl and put it on the heat.
  6. Beat fresh cream.
  7. Add whipped cream with apple paste. Add apple juice and milk and keep stirring. Add lemon juice and add more apple juice and milk if you need more taste. And chill it well.
    ※Chill the bowl for cream soup.
  8. Cut an apple for the decoration.
  9. Serve a soup in a bowl and decorate an apple.
·Rice dish with applesnew

Ingredients

  • 3 Apples
  • 5) Boiled green soybean…9 tablespoons
  • 6) Boiled edible chrysanthemum 100g

[A]

  • Rice…6 cups
  • Sticky rice…3 cups
  • 10 Shiitake mushrooms
  • 3 Deep-fried bean curds
  • Water…9 cups
  • Sake…6 tablespoons
  • Soy sauce…6 tablespoons
  • Sugar…3 tablespoons
  • Salt…3 teaspoons

How to cook

  1. Rinse rice and drain off the water from rice. Leave it for 2 hours.
  2. Remove the stems from shiitake mushrooms and cut those into stripes.
  3. Soak deep-fried bean curds into hot water and drain off the water. Cut it into stripes.
  4. Remove the core from apples and cut those into 1cm dice.
  5. Put A into rice cooker and cook.
  6. If it is boiled, add apples and cook again.
  7. 3. If it is done, add green soybeans and edible chrysanthemum and steam for 15 minutes.
·Apple Tsukimi soupnew

Ingredients

  • 2 Apples
  • Sliced pork ham…240g
  • Yuzu(Citrus) rind

  • Soup stock…16 cups
  • Salt…4 teaspoons
  • Soy sauce…4 teaspoons

How to cook

  1. Remove the core from apples and cut those into 5mm in quarters and boil those quickly.
  2. Put salt on pork and boil it.
  3. Slice yuzu rind into stripes and cut radish sprouts into 3 cm.
  4. Put apples, pork ham, radish sprouts in a bowl and add [A]. Put yuzu rind for the decoration.
·Steamed Dumplings with Applesnew

Ingredients

[Filling]

  • Ground meat…450g
  • Minched Japanese Leek
  • Ginger Soup
  • Salt…5 teaspoons
  • 3 Apples

[Others]

  • Dumpling Wrappers(Sale at a market) 

How to cook

  1. Remove the core from apples and cut those into 5mm cubes. Fry those apples lightly.
  2. Mix the ingredients for filling.
  3. Wrap the filling with dumpling wrappers.
  4. Put oil in the steamer and put dumplings. Steam those for 15 minutes.

Sweets Recipes

·Baked Apples with Almonds

Ingredients for 4 people

  • 4 medium size apples
  • Sugar···80g
  • 4 Sliced Lemon

Praline

  • English cream···300cc
  • Sliced Almond···75g
  • Sugar···20g
  • Water···15g

How to Cook

  1. Cut an apple into two pieces. Peel and take off the core. Put sugar, lemon and a little bit water with apple in a pod and cook.
  2. Roast 45g of sliced almonds until those get brown with the pan.
  3. Make caramel sauce with sugar and water. Add the rest of almonds and cool well. Put caramel sauce to the plate covered with oil and refrigerate it well. Chop up the sauce when its cool down for making Praline.
  4. Coat the inside of the heat-resistant container with butter. Place cooked apples and pour English cream. Sprinkle Praline and put the rest of sliced almond. Bake those for 5 to 6 minutes.
·Apple Tart

Ingredients for 5 people

Tart Pastry

  • Sugar···50g
  • Flour···180g
  • Butter···100g
  • 1 Egg yolk
  • Hard flour

Custard Cream

  • 2 Egg yolk
  • Flour···8g
  • Cornstarch···8g
  • Sugar···60g
  • Milk···200cc
  • Rum···15g

Boiled Apples in sugar

  • 3 Apples
  • Cinnamon···10g
  • Sugar···70g
  • Water···1/2 Cup

Fresh Cream for decoration

  • Fresh Cream···1/2 Cup
  • Sugar···15g
  • Vanilla Flavoring

How to cook

  1. Put butter in a bowl and mix it with a whisk until creamy. Add sugar and mix again. Add egg yolk and sifted flour and put it into the plastic bag. Let the dough stand in the refrigerator for an hour.
  2. Put the dough on cool cooking table and spread the flour lightly. Knead the dough softly and roll out the dough into 5 cm.
  3. Cut the dough as same size as tart mold and make air vents.
  4. Bake the dough with oven (170~180℃). Cool the dough a little before removing from the mold. Then remove the mold and cool the dough again.
  5. Peel one of the apples and take out the core. Slice an apple into 7 mm rings. Cut the rest of apples with peel into quarter. Simmer those with cinnamon, sugar and water.
  6. Make custard cream. Put flour, cornstarch, sugar and milk and mix well. Add milk little by little. Cook those over a medium heat and mix until those become creamy with wooden spatula. Remove the pod from the heat and add egg folk immediately and mix. If custard cream is cooled, add rum.
  7. Cut apples into tiny cube and mix with custard cream. Put it into ④. Put ring shaped apples on the top.
  8. Add sugar and vanilla flavoring with fresh cream. Whip those until stiff. Decorate the center of the tart with fresh cream and apples with peel.
·Steamed Bread with Apples

Ingredients for 4 people

  • An Apple
  • Sugar···100g
  • Flour···100g
  • Baking Powder···1~2g
  • 3 Eggs
  • Raisin···30g

How to cook

  1. Add baking powder with the flour and screen those twice.
  2. Whip an egg until stiff peaks form. Add sugar little by little and whip more. Add the powder of ① and mix with whipped egg using spatula.
  3. Cut an apple with peel into 1cm cubes.
  4. Add raisin and apples into ② and put those into aluminum case and steam over high heat for 20 minutes. Check with bamboo stick and make sure if the bread is steamed well.
· Apple Cake new

Ingredients (using 26cm pan)

[A]

  • Butter…10g
  • 3 Apples
  • Sugar…3~4 table spoon

[B] Mix ingredients in order from the top to bottom.

  • 2 Eggs
  • Sugar…4 table spoons
  • Mayonnaise…4 table spoons
  • Coffee…1 tablespoon
  • Cinnamon powder
  • Pancake mix powder…160g

How to cook

  1. Peel apples and cut those into 8 pieces.
  2. Put butter and sugar (A) and cook on law heat. Cook it until it turns brown.
    (4 to 5 minutes)
  3. Add pieces of apples and flip apples when one side is fried.
  4. Combine B well and add B to the pan over the pieces of apples.
  5. Put the lid on and braise it for 12 to 15 minutes on low heat.If the cake rises, check inside with the bamboo stick. If the inside of cake is not sticky, it is done.
  6. Put the dish on a pan and flip the cake over the dish.

Ingredients

  • 2 Apples 
  • Apple juice…1 litter
  • Agar powder…4g×2

How to cook

  1. Cut apples round slices in quarters
  2. Put Apple juice and agar in the pot and simmer it.
  3. Add apples and pour 1 into the mold and put it into the refrigerator.
·Lalabell Fruits new

Ingredients for 4 people

  • 6 Apples
  • Sugar…200g
  • Fresh Cream…3 cups
  • Pineapples can…6 slices
  • 12 Cherries
  • 24 Raisins

How to cook

  1. Peel apples and remove the cores and cut it in half.
  2. Put sugar on apples and put those into microwave for 10 minutes. After you cook apples with microwave, let apples cool down in the refrigerator.
  3. Put fresh cream and sugar in a bowl and whip it.
  4. Place apples on the plate and decorate with whipped cream, pineapples, cherries and raisins.
·Apple pound cake new

Ingredients

  • Soft flour…200g
  • A pinch of Salt
  • Baking powder…1 and 1/2 teaspoons
  • 2 Eggs
  • Cooking oil…100cc
  • Sugar…100g
  • Raisin…3 tablespoons
  • Cinnamon…1 teaspoon
  • 2 Apples(or 3 small apples)

How to cook

  1. Combine soft flour, cinnamon, baking powder and salt well.
  2. Put cooking powder, sugar and egg in a bowl and mix it well.
  3. Peel apples.
  4. Remove the core and cut round slices in quarters.
  5. Combine apples and raisins.
  6. Combine allingredients.
  7. Put cooking sheet in the oven and put the mold. Pour 5 to the mold.
  8. Bake the cake in the oven with 200℃ for 40 minutes.
·Apple Bavarian cream new

Ingredients

  • 2 to 3 Apples (Kougyoku)
  • Apple Juice…200cc
  • Milk…200cc
  • Sugar…80g
  • Fresh Cream…200cc
  • Vanilla flavoring
  • Gelatin…125g
  • Lukewarm water…150ml

How to cook

  1. Remove the cores of apples and cut those into rings. Fry apples when those get brown.(A)
  2. Dissolve gelatin with lukewarm water.
  3. Put Starch, sugar, milk in a pot. Stir it on heat and add 2. If gelatin melts, remove a pot from the heat and take the heat from a pot.(B)
  4. Whip the fresh cream until it forms a soft.
  5. Add apple juice, whipped cream and vanilla flavoring into (B).(C)
  6. Cut one apple into 1cm size and quarter them. Add sugar and simmer it. (It is convenient if you can cook many apples and put it in the refrigerator.)
  7. Pave (A)in the mold and add (C) on it. Spread cooked apples and put it in the refrigerator.
·Apple sauce cake new

Ingredients

[Sauce]

  • 3 Apples
  • Sugar…1/2 Cup
  • Water…1/2 Cup

[Cake]

  • Steamed bread…1 and 1/2 Cup
  • Sugar…1/2 Cup
  • An Egg
  • Water…1/4 Cup

How to cook

  1. Put all ingredients of sauce in a pot. Put a pot on heat and simmer it.(A)
  2. Put sugar, egg and water in a bowl and mix it. Add steamed bead and mix it again lightly.
  3. Add 2 into a pot with (A). And Steam it.
  4. If the cake is steamed, remove it to the plate.
·Yogurt Apple Jelly new

Ingredients

  • 1 bag of Japanese agar powder
  • Apple juice…2 Cup
  • Sugar…2 tablespoons
  • Yogurt…1 Cup
  • 1 Boiled apple (Slice an apple and add 2 tablespoons)

How to cook

  1. Put apple juice and Japanese agar powder in a pot. Put a pot on heat. If it is about to boil, add sugar.
  2. Simmer it well and if it is boiled, add apple.
  3. Add yogurt and simmer on low heat for a minute.
  4. Remove 3 to a plate and cool it down.
