Chinese Yam has much nutrition such as protein, mineral, Vitamin B1 and dietary fiber. There are many ways to cook Chinese Yam.  

Cooking Recipes

·Chinese-inspired Fried Chinese Yam and Beef

Ingredients for 4 people

  • Chinese yam・・・400g
  • A Block of Chuck eye roll・・・200g
  • 2 Bok-choy
  • Salt and pepper
  • Starch・・・10g
  • Oil・・・10g
  • Oyster sauce・・・44g
  • Sake・・・25g
  • 1 Hot pepper

How to cook

  1. Peel Chinese yam and immerse it in water with vinegar. Cut Chinese yam into bite-size pieces.
  2. Cut beef into 4cm and flake salt and pepper. Sprinkle salt and pepper and dredge the starch. Remove the seeds from hot pepper and cut those into tiny pieces. Brake Bok-choy into each piece and shave the stems and cut the leaves into 3cm pieces.
  3. Put oil into the pan and cook the beef at high heat. Add Chinese yam and Bok-choy stems and fry those for 1 or 2 minutes.
  4. Add the leaves of Bok-choy and oyster sauce, sake, hot pepper and fry until the soup is reduced.
·Chinese Yam with Sugared vinegar thick sauce

Ingredients for 5 people

  • Chinese Yam···300g
  • Sliced Pork···150g
  • 10 Japanese basils

Coating

  • Flour···80g
  • Mix starch···20g
  • Baking powder···5g
  • A raw egg
  • Water···100ml
  • Fried oil

Thick sauce

  • Soy sauce···15g
  • Vinegar···45g
  • Sugar···18g
  • Tomato Ketchup···36g
  • Water···45g
  • Japanese Leek···10cm

How to cook

  1. Cut Chinese yam into 5cm thin stick.
  2. Roll Chinese yam with Japanese basil and sliced pork in order.
  3. Make thick sauce with ingredients and seasonings.
  4. Mix flour with raw egg and water to make coating. Add raw egg and water little by little.
  5. Coat ② in batter and deep fry with 170℃.
  6. Cut Japanese leek into thin stripe and put those in water.
  7. Put thick sauce to fried Chinese yam and put Japanese leek on top.
·Egg rolls with Chinese yam

Ingredients for 2 people

  • Peeled Chinese yam・・・130g
  • Starch・・・40g
  • Soy sauce・・・18g
  • Dried Shrimp・・・20g
  • Cheese・・・20g
  • 8 Egg roll wrappers
  • Cooking oil

How to cook

  1. Peel Chinese yam and cut it into proper size. Use bakeware and put Chinese yam in microwave for 5 minutes until it becomes transparent.
  2. Mix Chinese yam with soy sauce and starch.
  3. Mix 2 with dried shrimps and cheese.
  4. Wrap 3 with egg roll wrappers and deep-fry with 150℃ oil.
·Hittsumi with Chinese Yam

Ingredients for 6 people

  • Burdock・・・250g
  • Carrot・・・200g
  • Chicken・・・375g
  • Shimeji (Hypsizygus tessellatus)・・・250g
  • Japanese Leek・・・2 and 1/2

[Suiton(750g)]

  • Chinese yam・・・250g
  • Flour・・・50g
  • Starch・・・110g
  • Salt

[ Seasoning soup]

  • Seaweed and dried bonito broth・・・900cc
  • Soy sauce・・・100cc
  • Sake・・・50cc
  • Seasoning
How to cook
  1. Peal Chinese yam and steam it. And puree Chinese yam.
  2. Knead flour, starch and pureed Chinese yam. Shape dough in sticks and cut those into 6mm size. Boil cut dough.
  3. Add Soy sauce, sake and seasoning with seaweed and bonito broth to make a soup.
  4. Cut chicken into proper size. Sauté chicken with sake.
  5. If a soup is boiled, add chicken, burdock, carrot and shimeji in order. Add Japanese leek at last.
·Boiled dish with Chinese yam new

Ingredients

  • Chinese yam
  • Sugar
  • Salt
  • Dried bonito shaving
How to cook
  1. Cut Chinese yam into 2cm round pieces. Peel it and shave the edge.
  2. Put water and Chinese yam in to a pot and boil it until those become soft. If you put a little bit of vinegar, you can maintain the firmness of Chinese yam.
  3. If Chinese yam is boiled, remove it to sieve basket.
  4. Make soup stock with dried bonito shavings.
  5. Add sugar and salt to soup stock and make dip sauce.
  6. Put Chinese yam into dip sauce and boil it. After boiling, stop the heat and leave it until cold. You can add more sugar if you feel that the taste is plain.(You should use more sugar so that the soup sink into Chinese yam.)
·Stamina Tofu dish new

Ingredients

  • Cotton tofu
  • Chinese yam
  • Nameko mushrooms
  • Grated radish
  • Natto
  • Okra
  • Soy sauce
How to cook
  1. Cut cotton tofu into smaller cube and put grated Chinese yam, nameko mushrooms, grated radish, natto and okra on top.
  2. Put dried bonito shaving and soy sauce.

Sweets Recipes

·Chinese Yam Juice

Ingredients for 2 or 3 people

  • Pealed Chinese yam・・・80g
  • Milk・・・400cc
  • Sugar・・・30g
  • Condensed milk・・・16g
  • Vanilla flavoring
  • Water・・・250cc

How to cook

  1. Blend all ingredients with the blender. (If you would like to make some stock, refrigerate Chinese yam juice and use blender when you drink)
