Scallop which is caught at Mutsu Bay is specialty product in Aomori and dried scallop eyes are exported all over the world. Aomori scallops are smaller than the scallops from outer sea but the flavor ingredient is concentrated in the scallops.  

Cooking Recipes

·Scallop curry

Ingredients for 2 or 3 people

  • 12 Scallop eyes
  • Salt and pepper
  • White wine・・・1/4 Cup
  • A Onion
  • A Carrot
  • 12 green peppers
  • Curry solid sauce (for seafood)
  • Cooking oil…28g
  • Butter・・・28g
  • Soy sauce・・・6g

How to cook

  1. Put salt and pepper to scallop eyes and leave those for 5 minutes.
  2. Put the butter in a pod and sauté scallop eyes. Add white wine and steam those for 1 or 2 minutes. Remove the scallop eyes and keep the soup.
  3. Cut onion into half and cut pieces into 7 or 8 mm. Cut carrot into 1cm round.
  4. Put cooking oil, butter (14g) and sauté onion and carrot for a couple minutes. Add 3 cups of water and the soup from ②and stew for 15 minutes.
  5. If carrot becomes soft, add the solid curry soup and stew for 5 or 6 minutes. Add scallop, green peppers and stew it again. Put soy sauce for seasoning.
·Fried scallops and vegetables

Ingredients for 4 people

  • 6 Scallop eyes
    Broccoli (half size)
    1 Red pepper
    4 Shiitake
    Cooking oil
    Starch with water


  • Japanese leek
  • Ginger
  • Salt and pepper
  • Starch


  • Salt・・・7.5g
  • Sugar・・・7.5g
  • Sake・・・15g
  • Soup(chicken stock)・・・30g
  • Pepper

How to cook

  1. Slice scallop eyes into half and sprinkle salt and pepper. Dredge the starch. Cut broccoli, red pepper, shiitake into bite-size pieces. Cut the spices into 5mm tiny pieces.
  2. Boil water in a pod and add salt (prepare the extra salt for boiling) and cooking oil and boil broccoli and shiitake. And put oil into a pan and fry scallops until brown at medium heat.
  3. Remove broccoli and shiitake from boiled water and drain off the water.
  4. Put cooking oil to a pan and fry the spices (Japanese leek, ginger) at high heat. Add red pepper, boiled broccoli, shiitake, fried scallop and mix. Add some seasoning and starch with water and mix quickly.
  5. Place broccoli around the dish and place fried scallops and vegetables in the middle of the dish.
·Salad with Scallops and Spring Drizzle

Ingredients for 5 people

  • Spring Drizzle···30g
  • Ground Pork···50g
  • 5 Scallops
  • Onion···50g
  • Celery···1/2
  • Carrot···30g
  • 5 Could Ear
  • 3 Green Onions
  • Nam pla···45g
  • Lemon Juice···30g
  • Sugar···4.5g
  • Red Pepper
  • Garlic···half of a piece

How to cook

  1. Reconstitute dried spring drizzle and cut it in 3cm.
  2. Crosscut the scallops in two pieces.
  3. Slice onions, celery and cut carrots into julienne stripe. And cut green onions into 2cm.
  4. Grate garlic and mix it with seasoning.
  5. Boil 2 cups of water in a pod and boil ground pork and scallops in order. Also boil spring drizzle and drain off the water.
  6. Dress ③and ⑤ in ④. Arrange those on dish and garnish the plate with parsley.
·Fried rice with scallop, squid and garlic new

Ingredients for 2 people

  • Scallops・・・80g
  • Squid・・・1/2
  • Red paprika・・・40g
  • Yellow paprika・・・40g
  • Onion・・・100g
  • Garlic・・・1/2 piece
  • Rice・・・400g
  • Green pea・・・400g
  • Oil・・・17g
  • Butter・・・20g
  • Salt・・・5g
  • Pepper
  • Soy sauce・・・17g

How to use

  1. Cut squid, red and yellow paprika and onion into dice.
  2. Put the butter in a pan and add minced garlic.
  3. Add rice in a pan and put salt , pepper and soy sauce and also add 1 and fry those.
  4. Add green pea at last and sauté again.
·Kaiyaki Miso with Scallop new

Ingredients for a dish

  • Scallop (raw) …big size…1 or 2 scallops, small size…3 scallops
  • Japanese Leek
  • 3 Eggs
  • Miso
  • Rice wine

How to cook

  1. Remove the meat of scallop from the shell and remove the organs. Rinse the meat. If the meat is big, cut it in half. Cut Japanese Leek into stripes.
  2. Put water and scallop into the shell and cook.
  3. Add half amount of Japanese leek and miso.
  4. Add the rest of beaten egg and Japanese leek at last.
·Rice bowl dishes with thick sauce new

Ingredients for 2 people

  • Rice・・・160g
  • Water・・・200ml
  • A Squid
  • 5 Scallops
  • Shrimps・・・300g
  • Bamboo Shoot・・・1/4
  • 3 Shiitake mushrooms
  • Carrot・・・1/2
  • 2 Onions
  • Bean Spouts・・・100g
  • A Piece of Garlic
  • Cooking Oil
  • A Soup Stock Cube
  • Water・・・200ml
  • Starch・・・9g
  • Water.・・・30ml
  • Salt

How to cook

  1. Rinse rice and leave it with water for a while. And cook rice.
  2. Make a soup with a soup stock cube.
  3. Fry garlic with Chinese wok with low heat. Fry vegetables until soft.
  4. Add 2 of soup to 3 and add sliced squid and scallops. Add starch with water and if the soup becomes thick, turn off the heat.
  5. At last put the thick sauce on cooked rice.
    If you need more taste, add some salt.
