Cooking Recipes

·Kenoshiru

Ingredients for 50 to 60 people (You can keep it as preserved food)

  • Carrots・・・1.3kg
  • Burdocks・・・700g
  • Radish・・・4kg
  • Wild Fiddleheads・・・1kg
  • Bracken・・・1kg
  • Wild plant “Fuki”・・・1.3kg
  • Frozen bean curd・・・1.7kg
  • Deep fried bean curd・・・2700g
  • Miso・・・1.5kg
  • Soybeans・・・1kg
  • Konjac・・・1.2kg
  • Seaweed・・・3~4
  • Dried fish(small sardine)・・・8~10

How to cook

  1. Cut vegetables and wild plants in 5mm cube. Pour water in a pod with vegetables and wild plans. Vegetables and wild plants should be covered enough by water and simmer those.
  2. Roast seaweed and brake into pieces. Add those to 1 and simmer until seaweed become soft .
  3. Cut frozen bean curd, deep-fried bean curd and konjac into cube. If 2 is simmered enough, add frozen bean curd, deep-fried bean curd and konjac.
  4. Add Miso and Soybeans and simmer again. If the soup is simmered well, turn of the heat.
·Hittsumi

Ingredients for 6 people

  • Burdock・・・250g
  • Carrot・・・200g
  • Chicken・・・375g
  • Shimeji (Hypsizygus tessellatus)・・・250g
  • Japanese Leek・・・2 and 1/2

[Suiton(750g)]

  • Chinese yam・・・250g
  • Flour・・・50g
  • Starch・・・110g
  • Salt

[ Seasoning soup]

  • Seaweed and dried bonito broth・・・900cc
  • Soy sauce・・・100cc
  • Sake・・・50cc
  • Seasoning
How to cook
  1. Peal Chinese yam and steam it. And puree Chinese yam.
  2. Knead flour, starch and pureed Chinese yam. Shape dough in sticks and cut those into 6mm size. Boil cut dough.
  3. Add Soy sauce, sake and seasoning with seaweed and bonito broth to make a soup.
  4. Cut chicken into proper size. Sauté chicken with sake.
  5. If a soup is boiled, add chicken, burdock, carrot and shimeji in order. Add Japanese leek at last.
·Ikameshi

Ingredients for 5 people

  • 10 Squids (medium size)
  • Sticky rice・・・150g
  • Carrot・・・50g

[ A soup to soak squids]

  • Soy Sauce・・・100cc
  • Salt
  • Rice Wine・・・50g
  • Sugar・・・27g

How to cook

  1. Rinse sticky rice and soak it into water more than 2 hours.
  2. Reconstitute dried shiitake with water and cut those into stripes.
  3. Peel carrot and cut it into 2 to 3 cm stripes.
  4. Drain water from sticky rice and mix with carrot and dried shiitake.
  5. Make a soup with soy sauce, salt, rice wine and sugar.
  6. Remove squid tentacles and put 4 inside squids.
  7. Put stuffed squids into 5 (a soup) and boil those for 20 minutes.
·Kaiyaki Miso with Scallop

Ingredients for a dish

  • Scallop (raw) big size…1 or 2 scallops, small size…3 scallops
  • Japanese Leek
  • 3 Eggs
  • Miso
  • Rice wine

How to cook

  1. Remove the meat of scallop from the shell and remove the organs. Rinse the meat. If the meat is big, cut it in half. Cut Japanese Leek into stripes.
  2. Put water and scallop into the shell and cook. Add half amount of Japanese leek and miso.
  3. Add rice wine and half amount of beaten egg.
  4. Add the rest of beaten egg and Japanese leek at last.
·Steamed egg hotchpotch

Ingredients for 5 people)

  • 3 Eggs
  • Fish fumet・・・450cc
  • Soy sauce・・・17g
  • Sake・・・17g
  • Salt・・・2.5g
  • Chicken・・・100g
  • Fish sausage・・・5 slices
  • 3 Dried shiitake
  • Carrot・・・3cm piece
  • Bamboo shoot・・・use the ear tip
  • 10 Ginkgo nuts
  • Japanese honewort

How to cook

  1. Wipe the seaweed with cloth. Put water, seaweed in a pod and boil. Scald the water and turn off the heat. Remove the seaweed.
  2. Boil ginkgo nuts and remove the skin.
  3. Cut the ingredients into small pieces and put those in a bowl.
  4. Mix eggs and strain. Mix strained eggs and fish fumet and soy sauce, sake and salt. Put the egg soup in the bowl and put Japanese honewort on top.
  5. Steam egg soup using the steamer and leave it for 10 minutes.
· Deep-fried pork with vinegarnew

Ingredients

  • Pork meat
  • Cucumber
  • Can of pineapples and cherries
  • Soy sauce
  • Ginger
  • Vinegar
  • Starch

How to cook

  1. Soak sliced pork with sake, soy sauce and ginger juice.
  2. Put starch on pork and deep-fry it.
  3. Cut deep-fried pork into bite size and grain cucumber and tastes with soy sauce and vinegar.
  4. Put canned pineapples and cherries on the dish.
· Spinach in dressingnew

Ingredients

  • Spinach or Japanese mustard spinach
  • Cheese
  • Salted kelp
  • Wasabi (green horseradish paste)
  • Soy sauce

How to cook

  1. Boil spinach or Japanese mustard spinach.
  2. Cut it into 4-5cm size.4~5㎝に切る。
  3. Slice cheese and combine spinach or Japanese mustard spinach with cheese, salted kelp and wasabi dressing.
·Octopus with vinegar dressingnew

Ingredients

  • Boiled octopus (or squid)
  • Onion (or Japanese leek)
  • Seaweed
  • Dressing (Vinegar, miso and sugar)

How to cook

  1. Slice boiled octopus.(A)
  2. Cut onion into thin rectangle. Cut seaweed into bite size and boil it with salt.(B)
  3. Combine (A) and (B) with dressing.You can also add boiled stem of spinach to put more color.
·Radish in dressingnew

Ingredients

  • Radish…500g
  • 1 Cucumber
  • Cabbage…500g
  • Salt…1 tablespoon

[Dressing]

  • Vinegar…3 tablespoons
  • A piece of Garlic
  • Coarse grind of black peppers
  • Cooking oil…6 tablespoons

How to cook

  1. Cut Radish into 1cm and quarter them. Cut cucumber in rings and cut cabbage coarsely. Rub radish, cucumber and cabbage with salt.
  2. If vegetables become soft, saok 1 in dressing for an hour.

Advice

  • You should make this dish right before you serve.出す少し前に作ったほうが良い。
  • You can add vinegar and oil as you like.
  • You can also use carrots, kumquats or lemon peel to add some color.
· Snack with various vegetables(Kobiru/Kobiri)new

Ingredients

  • Carrot
  • Burdock
  • Noodles made of Konjac
  • Deep-fried bean curd
  • Chicken
  • Sticky rice
  • White senbei (rice cracker)(

How to cook

  1. Fri vegetables and another ingredients and combine with sticky rice. Sandwich cooked vegetables and rice between white senbei.
·Tawara rice dishnew

Ingredients

  • Processed cheese
  • Melted cheese
  • Rice
  • An Egg
  • Flour
  • Bread crumb

How to cook

  1. Cut processed cheese into dice. And combine cheese with cooked rice.
  2. Make rice balls (shape like an egg) and put melted cheese in center.
  3. Put the flour on rice balls and dip those to beaten egg.
  4. Deep-fry the rice balls.
·Rice dish with black beannew

Ingredients

  • Black beans
  • Brown sugar
  • Sticky rice
  • Salt

How to cook

  1. Boil black beans with brown sugar and salt in advance.
  2. Rinse sticky rice right before you cook rice.
  3. When you put water in a jar to cook sticky rice, put less water than the amount of water for white rice.
· Festive red rice with white senbei(rice cracker)new

Ingredients

  • Azuki beans
  • Rice
  • Sticky rice
  • White senbei(rice cracker)
  • Salt
  • Sugar

How to cook

  1. Simmer azuki beans until those get soft.
  2. Soak sticky rice in the water over night.
  3. Steam rice for 20 minutes with steamer. Remove the rice into a bowl and mix it with a little bit of the soup from azuki beans, salt and sugar to taste.
  4. Add azuki soup and steam the rice again with a steamer.
  5. Fill azuki rice between senbei crackers.。
